Ribeye

A ribeye steak can be served bone-in or boneless and has a robust beefy flavor, generous marbling throughout, becoming juicy and tender when cooked properly. The flavor and texture of this cut are perfect for any dish you want to make. It comes from the prime rib area, near the upper part of the back close to the shoulder of the cow providing an incredible fat content that gives you amazing consistency in your dishes.

Beef Tenderloin

The most tender cut of beef is the one that will make your mouth water for more. Tenderloin is also known as "pre-rolled" or very lean meat. It has an extravagant amount of marbling in it — perfect if you're looking to cook up some delicious steaks. Beef tenderloin is a larger cut of beef that includes the filet mignon. If you want to cook a large, shareable beef dish like beef Wellington, purchase the entire tenderloin, or at least a large portion.

New York Strip

When it comes to beef, the New York strip has what you want and more. A New York strip is cut from the beef short loin, and it's well-marbled and full-bodied with an excellent flavor and can withstand a variety of cooking methods. The short loin is a large area of the animal, so strip steaks can be quite long and are typically between one and two inches thick.

T-Bone

When it comes to steak, the t-bone is at or near the top of most people's list. This cut originates from short loin subprimal and offers an excellent blend of tenderness with great flavor that makes every bite satisfying. Combining two types of meat from the cow, the t-bone can give you two steak flavors and textures in one cut to please the palate.

Top Sirloin

The top sirloin is a steak that comes from the muscular area of an animal. It provides amazing beef flavor without a lot of fat, making it one of the most perfectly balanced steaks when cooked to the right temperature. Top sirloin has deep, rich flavors and isn't quite as tender or flavorful in comparison to other steaks but it does offer you some incredible tastes unlike anything else out there.

Porterhouse

Porterhouse steaks look similar to t-bones because they are also cut from the short loin and contain both strip and tenderloin. The difference is in their size and lesser tenderness. The USDA specifies that the tenderloin portion must have a thickness of at least 1.25” at its widest point to classify as a porterhouse.
